The most ripe and overripe cherries, right after picked, are first washed to remove any impurities or dirt. Then they are pre-dried on smooth concrete patios under the sun for 5 days, and finish drying in mechanical dryers for 24-48 hours at 30ºC. After drying, the coffee stays for about 45 days in wooden silos in order to homogenize flavours and humidity, and is later sorted mechanically by size (15up), densimetric and optical screens, to ensure quality and homogeneity. Finally, the coffee is put in sealed plastic and jute bags of 60kg for export.
